Seventeen peonies: how a dense bunch ages
A very large peony bunch does not fade evenly. It ages in zones, and once you know which zone goes first the whole thing lasts noticeably longer, because you can act before the bunch looks tired rather than after.
The outer ring always leads.
Why the edge goes first
Those stems were cut first, handled most and sit fully exposed to the air of the room. They also carry the heads that took every knock in transit, so any bruising on the bunch is on the outside.
The centre is the opposite case: heads there are shaded by their neighbours, they open more slowly, and they are still tight when the outer ring is already dropping petals.
That gap widens over the week. By the middle of the vase life a dense bunch has an open, slightly blown edge and a firm core, which reads as untidy from a metre away even though most of the flowers are perfectly good. Almost everybody throws the whole thing out at that point, and almost nobody needs to.
Editing rather than discarding
Pull the spent outer heads out one at a time as they go. The bunch closes up behind them, the dome gets smaller and stays even, and the core carries on opening into the space that has been freed.
Re-tie what is left, or move it into a narrower vase.
Done twice over a week, seventeen peonies turn into a full armful, then a generous bunch, then a small dense one, and the last stage often looks better on a table than the first did. Nothing is being rescued here; the flowers that remain are simply younger than the ones removed.
Crowding and water
Density is the other thing that shortens a large bunch. Thick stems packed into one vase leave very little water between them, the level drops fast, and the ends nearest the middle of the bundle end up drawing from a thin, warm layer at the bottom. The middle stems are the ones that fail first when that happens.
A vessel wider than the count suggests solves most of it, and a bucket shape beats an elegant narrow one every time for a bunch this size.
Strip every leaf that reaches below the waterline before the bunch goes in. Change the water rather than topping it up, because in a crowded vase the debris settles among the stems where you cannot see it. If the water smells at all, the stems need a fresh cut as well as clean water. Splitting a very large bunch between two vessels is a reasonable answer that nobody suggests often enough.
Before you order this many
Check that there is a container in the house that will take it, and that the recipient in Antalya is going to be home for the next few days. A large bunch left standing while somebody is away does the whole of its opening and dropping unseen. Timing matters more here than with any smaller count. The flowers do their best work in the middle of the week rather than on the day they arrive. Order for a quiet week rather than a busy one, if you have the choice.
Ask for mixed stages rather than uniform tight buds. A bunch built entirely from closed heads opens together and finishes together, which wastes the main advantage a big count has.
Ask, too, whether the shop will take the stems down in length at the point of sale, since long stems look impressive in the wrapping and are the first thing that has to go once the bunch is in water.
