Fifty-one peonies: what it takes to build one
Below about twenty-five stems, a florist builds in the hand. The bundle turns against the palm, each stem crosses the last at an angle, and the whole thing is tied at a single point.
That method runs out well before fifty-one peonies. Peony stems are thick and barely flex, so the spiral has to stay shallow, and a shallow spiral at this count produces a grip too wide for one hand to close around.
The frame
Large peony bouquets are built onto a frame or into a bouquet holder rather than gathered freehand. The frame carries the shape of the dome and takes the load off the tie, which matters because a tight ribbon crushes thick stems and a crushed stem stops drinking within hours.
Work usually starts from the outside in. The largest heads go into the outer ring so the edge of the dome stays full, medium ones fill the body, and the tightest buds go towards the centre where they have room to open later without pushing their neighbours out of line.
Stems get graded by thickness before anything is tied.
This sounds fussy and it is the whole job. Mixing thin and thick stems in the same ring makes the heads sit at different depths, and at fifty-one heads a difference that would vanish in a small bouquet reads from across the room as a dent in the dome. The build takes considerably longer than a hand-tied bouquet of the same flowers, and most of that time goes on sorting rather than assembly. Peonies also have to be handled once and once only, because every extra touch on an opening head costs petals.
What a rushed build looks like
Gaps stuffed with foliage are the clearest sign. A little peony leaf belongs in the bouquet and comes off the same stems, but bought-in greenery packed into holes means the heads were never calibrated.
Look at the profile from the side rather than the top. The dome should curve evenly, and a flat patch or a head standing above the rest means the ring underneath it collapsed. Look at the cut ends too: they should be pale and freshly angled across the whole bundle, not dark on some stems and bright on others.
A bouquet this size should also stand on its own cut ends without leaning.
Living with the result
Fifty-one peonies do not go into a household vase. The tied grip is thicker than a forearm and the weight of open heads will pull over anything light, so the realistic options are a floor vase with a broad neck, a bucket hidden inside a planter, or splitting the flowers between two or three containers.
Water needs changing every day, which at this volume means lifting the whole bouquet out, washing the vessel and recutting the ends. Keep it out of direct sun and away from radiators, and if there is a cool room in the flat, that is where it should spend the nights.
When the count earns itself
This size is meant to be seen by other people. An arrival at an airport, a proposal with friends watching, a milestone birthday at a long table: the volume does the announcing and nobody has to explain it.
In a quiet room it can work against you. The recipient cannot hold it while you talk, so the flowers get carried off to a bucket within a minute and the moment breaks. If the scene is private, twenty-five heads of the same variety will land better. For a recipient in Brooklyn who lives in a small flat, it is worth asking in advance whether there is anywhere to put it.
