Hand somebody a bouquet built on evergreen and the first thing they notice is the weight of it. Branches, cones and woody stems carry real mass, and the recipient adjusts their grip before they have looked at a single flower. Nothing else in the seasonal range announces itself that way.

The weight is not decoration. It is the reason this format behaves so differently once it is indoors.

Structure that holds without water

Evergreen foliage keeps its shape for weeks whether or not it is standing in water, so the outline of the bouquet is fixed on the day it is made and does not sag as the flowers age. That is the opposite of a soft hand-tied bunch, which loses its silhouette the moment a few stems droop.

It means the flowers inside can be replaced. When the roses have finished, they lift out and something fresh goes back into the same gaps, and the bouquet survives another fortnight looking intentional.

Some of these arrangements are barely bouquets at all. Once the dried elements are added, cones, cinnamon sticks, cotton stems, dried seed heads, half the material has no shelf life to speak of and can be kept for the following year in a dry cupboard.

What a heated room does to it

This is where most of the damage happens, and it comes from inside the house rather than from the weather. Dry air from radiators and fan heaters pulls moisture out of needle and petal alike, and a vase placed above a radiator will be shedding needles within days.

Move it away from the heat and the same arrangement runs for weeks.

The scent is worth thinking about before you order. Fir and pine give off a strong resinous smell that fills a hallway pleasantly and can be overwhelming in a small bedroom or beside a dining table where people eat. Ask for cypress or eucalyptus instead if the bouquet is going somewhere enclosed.

Resin itself makes a small mess. Cut evergreen stems leave sticky marks on hands, paper and polished surfaces, which is why these bouquets tend to be wrapped in heavy kraft rather than film, and why a coaster under the vase saves the table.

Needles will drop regardless, in small quantities, for as long as the bouquet is in the room.

Choosing between fresh and structural

Two questions settle it. Is this bouquet meant to be looked at for one evening, or to hold a corner of a room until the middle of the following month.

For the evening, ask for fewer branches and more open flowers, since evergreen at close range reads as heavy and the flowers get lost in it. For the long stay, the reverse, with a handful of strong heads set into a structural base.

There is one situation where the format is wrong outright. A bouquet that has to travel any distance in the cold should be light and thoroughly wrapped, and a heavy branch-based arrangement with exposed heads is the worst possible thing to carry across a car park, because thin petals freeze quietly and only show the damage as translucent patches an hour after they come indoors.

Winter bouquets are the one seasonal group people keep long after the occasion has passed, partly out of habit and partly because there is still something alive in the vase when everything else has been cleared away.

If the person in Dushanbe is out at the time of delivery, agree a different slot rather than leaving the bouquet in an unheated lobby, since an hour there costs the flowers more than the whole journey from the shop.
