Ranunculus bouquets: a flower that changes size in your kitchen
Most cut flowers arrive at their best and go downhill from there. Ranunculus does the opposite for the first few days. The bud that comes through the door is a tight ball, the size of an apricot, layered like a paper rosette and closed hard at the top.
By the third morning it is twice as wide, opened flat enough to show the dark green or black centre, and the whole bunch has a different silhouette to the one you paid for.
Leave room for it
Practical consequence first. A bunch that fits neatly on a narrow hall shelf on Monday will be overhanging it by Thursday, so the vase wants placing where nothing is pressing in from the sides.
The colour shifts as well. Layered buds hold their darkest tone in the tightly packed middle, and as the outer petals fold back, the shade you see lightens noticeably. A coral bunch reads apricot by the end of the week. Anyone matching flowers to a table setting should assume they are choosing the open colour, not the closed one.
Opening also changes what the bunch is doing in the room. Tight buds read as neat and slightly formal, which is why they photograph well on a laid table. Fully open ranunculus reads loose and garden-like, closer to a peony than to a rose. The stems bend further out as the heads gain weight, so the outline spreads as well as the individual flowers. A bunch bought for a specific evening should therefore be timed rather than simply ordered. Two or three days ahead in a cool room gets it to the width most people picture when they ask for ranunculus.
Keeping it cool
Speed of opening is almost entirely a question of temperature. In a cool room the bunch takes the best part of a week to reach full width. Next to a radiator it gets there in a day and then drops petals on the third.
This is a winter and spring flower by nature, which is worth remembering when the heating is on. The coolest spot in the house serves it better than the brightest one, and moving the vase somewhere cold overnight buys real extra days.
Water goes in shallow, no more than a third of the vase, and gets changed every other day. The stem is hollow and softens in deep water faster than a solid one. Recut with a sharp knife, taking off very little, since the stem splits lengthways if you press on it.
Handle the stems by the base rather than the middle. That is where they crack.
What to expect at the door
A well-made ranunculus bunch looks looser than people expect. Heads sit at deliberately different heights and the stems curve outwards rather than standing to attention, because a thin hollow stem under a heavy head will never hold a rigid dome for long. A tight round ball of a bouquet usually means the stems have been bound hard, and a crushed hollow stem stops drinking within hours.
Check the tie. It should sit loosely enough that the stems under it are still round.
Check the necks too. Ranunculus bouquets travel in a box with the lower stems held in place, and anything that has been allowed to slide about arrives with a kink under a head or two. A kinked neck does not recover, and no amount of fresh water or plant food will bring that head back up.
Bruising shows differently on this flower than on a rose. The petals are thin and numerous, so a knock leaves a translucent patch rather than a brown edge, most visible when you hold the head up to a window.
For a recipient in Yerevan who likes flowers but has no interest in fussing over them, this is a good bunch to send in its season. It asks for a cool corner, shallow water and nothing else. The rest of the show it puts on by itself.
