One metre roses: where the length comes from
On a grower's bench a rose is sorted by stem length before colour or variety is considered. The tall grades are pulled out first, tied into their own bunches and priced separately, and what is left fills the ordinary boxes. That sorting is the whole reason a metre of stem costs what it does.
Length is not something a florist adds afterwards. It is grown, and it takes the plant longer.
The long grades come off plants grown cool and slowly. Cooler nights and a longer cycle give a thicker stem and a head with more petals in it, which is why height and head size arrive together and cannot be ordered apart. A metre stem carries a bloom you can read across a room. It also means the plant produces fewer of them in a year. Everything a shop can promise about availability follows from that one fact.
Long stems come in batches, not on demand.
Ordering ahead
A florist holding tall grades has usually bought them for a particular week. When a box lands, the colours in it are whatever the farm sent, so red is reliable and the softer shades are not always cut in the tall grade at the same time. If a specific colour matters more than the height, say so when you order. Otherwise expect to be offered either a shorter stem in the colour you asked for or the full metre in something close to it.
What the extra length gives you
Two things separate a tall stem from a short one on the bench. The head is larger and opens more slowly, because a bud with more petals takes longer to unwrap. The stem is straight and rigid enough to stand unsupported, which is the property everything else in this category depends on.
Rigidity is also what fails first. A stem left out of water too long goes soft just below the head, and at a metre that bend is visible from across the room while on a short rose nobody notices it at all.
Petal count changes how many stems you need. Nine long heads read as more flower than fifteen ordinary ones, so numbers that would look thin at standard length are enough here. Florists building tall bunches tend to work with lower counts and more space between the blooms.
Price does not rise smoothly with length. It steps. Each grade above the standard is a separate line at the farm with its own volume, and the tall lines are small, so the jump to a metre is larger than the difference in length suggests. Above a metre the steps get steeper again. None of this shows in the finished bunch, which is why a metre bouquet of a modest count often costs what a large bunch of ordinary roses does.
There is one thing worth doing when the box is opened. Run a hand down two or three stems: they should be firm along the whole length, with no soft section under the head and no dark, waterlogged end. A tall rose that has travelled badly shows it there long before the petals say anything. Ask the courier to wait while you check.
One metre roses sit at the point where a bouquet still behaves like a bouquet. Someone in Nice can carry it home, stand it in a tall vase and live with it, which stops being true a little further up the scale. Beyond this length the stem starts dictating the furniture.
