At sixty centimetres a bouquet stops being a table object and starts behaving like a structure. The stems are long enough to move against each other, heavy enough at the top to fall out of line, and a quick assembly shows within a day.

The spiral, and why it exists

Long stems are laid at an angle, each one crossing the last in the same direction, so the bundle opens out below the binding point like a fan. Grip the finished bouquet and it should stand on its own cut ends on the table without help. Stems stacked straight, the way pencils sit in a jar, jam together at the tie and the ones trapped in the middle draw almost no water.

You can see this on the underside. A proper spiral shows every cut end separately, spread in a circle; a rushed bundle shows a tight knot with ends hidden behind each other.

The binding point matters as much as the angle. Too high and the heads splay apart in the vase, too low and the bouquet closes into a column with no shoulder to it.

Grading the heads

Heads are never all set at one level. A florist places them with small differences in height so the top of the bouquet reads as a shallow dome, which is what gives it depth from the side. A flat top looks unfinished from any angle other than directly above.

Sixty centimetres punishes careless grading. Over that length a difference of a centimetre or two at the tie becomes several centimetres at the buds, and one head standing proud of the rest is the first thing anyone notices.

What to look at when it arrives

Turn the bouquet slowly and watch the outline. It should stay roughly the same shape through a full turn, with no flat side and no gap where a head is missing from the second row. Then look at the stems below the wrapping, which should be stripped of leaves for the lower part and free of thorns where hands will hold them.

A bouquet at this length is carried on the forearm, and a well built one balances there with the heads slightly forward and slightly up. If it wants to roll in your arm, the spiral is uneven, and it will lean in the vase for the same reason.

Living with it

Cut the stems down to suit the vase you actually own. Trimming a long stem is normal work, part of the length always goes into the bin on the first evening, and nothing is lost by it. Use a vase about a third of the bouquet's height with a broad heavy base, since a tall arrangement over a light vase tips at the first knock.

The rest is ordinary care: deep clean water changed in full, a fresh angled cut every couple of days, no radiator underneath and no fruit bowl alongside.
