A spray rose carries several blooms on one stem. The central bud opens first and sits highest, the side buds are smaller and follow a day or two behind, and each head is noticeably smaller than that of a single-stem rose.

That habit changes what happens after the flowers reach the table.

The first week at home

On day one the bouquet looks thinner than a classic rose arrangement of the same stem count, because only the central buds are open. By day three the side buds have caught up and the gaps close. Most people say the bouquet peaks halfway through its life rather than on the day it arrives.

Cut the spent central bloom off at the base as soon as it goes soft. The side buds open faster once it is gone, and the whole bunch holds its shape for another few days.

Everything else is ordinary cut-flower routine. Change the water every second day, wash the vase while you are at it, take a fresh slice off each stem with a knife, and strip any leaf that would sit below the waterline. Done properly this gives you the usual week of fresh cut life, sometimes more. Skipped for three days running, it gives you brown edges on the outer petals and a stem that has stopped drinking.

Pick a vase of medium height with a narrowish neck. Spray rose stems are thin and flexible, and in a wide opening they splay outwards until the clusters lean on each other and snap the small side shoots.

Volume without the stem count

Ten spray stems put roughly as much colour into a bunch as thirty single-headed ones, since every stem brings three to five buds with it. The bunch feels denser and weighs less, and it sits lower in the hand.

What it will not do is give you one large bloom on a long stem.

The silhouette differs too. Single-headed roses line up into an even dome; spray roses spread sideways and upwards in a scatter, with buds at several heights and daylight between them. The result reads closer to a garden bunch than to a formal one, which is the reason some people choose it and the reason others do not.

Mixing

Spray roses are one of the easiest things to combine. They fill the hollows between large heads, supply half-tones a single bloom cannot, and rarely compete for attention with whatever leads the arrangement.

They sit well with eustoma, alstroemeria, freesia and soft greenery, and they work equally well on their own when you want a bunch that stays quiet.

On the way and on arrival
