Most of the choosing happens at one point: how much of the bouquet is fresh flower and how much is greenery, cones and dried material. Everything else, colour, size, wrapping, follows from that ratio, and it is the question people skip.

A bouquet built mainly on conifer with a few blooms is a long, quiet gift. It holds its shape for weeks, asks for very little and reads as seasonal from across the room. A bouquet built mainly on flowers with a branch or two for the season is brighter on the first evening and shorter-lived, which is the right trade when it is going to a table that people will be sitting at that night.

Neither is better. They fail in different ways.

Where the decoration starts working against the flowers

Cones, pods, cinnamon and cotton on wire legs are what makes the season legible. Past a certain density they stop being accents and become the bouquet, and the flowers end up as small bright dots inside a woody mass. The usual signs are decoration crowded around the centre, glitter dropping onto the wrapping in the courier's hands, and a spray-painted branch that leaves colour on a sleeve.

Ask for the dried elements to be spread through the outline rather than clustered at the front, and the piece will look composed from any side.

Colour behaves differently against dark greenery

Deep green swallows anything muted. Powder pink, lilac and pale peach that look delicate in a summer bouquet go grey against spruce, while white, cream, deep red and true burgundy hold their edges. Gold and copper details work on dark needles because they catch light rather than reflect it flatly.

If the recipient's home is full of colour already, a single-shade bouquet with green does more than a multicoloured one.

Common mistakes at the ordering stage

Three come up every year. Ordering a large bouquet for someone who will be handed it outdoors, where they then have to carry it, a bag and their coat at once. Choosing an intricate build for a person who will be travelling with it the same evening, since conifer branches snap at the base and wired cones catch on other people's clothing. And asking for scented lilies or hyacinth for a small flat, where the smell competes with the resin of the greenery and neither wins.

After the holiday

The greenery goes on standing long after the flowers have finished, so pull the spent stems out and let the rest carry on. Water in the vase still matters for anything fresh in the bunch, changed every couple of days, with resinous stems recut. Needles start dropping when the vase stands beside a radiator, because dry warm air empties them in a few days, and no amount of watering reverses it.

The dried part has no expiry at all. Cones, pods, cinnamon sticks and cotton come out of the finished bouquet, dry on a shelf and wait for next season, which is not something a summer bouquet ever leaves behind.

New Year bouquets are ordered in one short rush at the end of December, when couriers, roads and lifts are all busier than usual. Agree a delivery window with the person who is at the address, because a bouquet in Side left with a neighbour or a concierge loses more in an unheated hallway than on the whole journey there.
