Roses by stem length: start with the room, not the flower

Most people pick the longest stem they can afford and assume that settles it. Length is a fit measurement rather than a grade, and the right one depends on where the flowers will stand and who has to carry them there.

Work backwards from the room and the choice makes itself.

Short stems

These are for surfaces where space is short and the bouquet is seen from above rather than across a room: a kitchen table, a desk, a bedside cabinet, a hospital room where every flat surface is already spoken for.

A short bunch also sits low enough to talk over at dinner, which a tall arrangement in the middle of a table never does.

The other advantage is stability. A compact bouquet in a low, heavy vase survives a household with a cat or a small child rather better than a tall one balanced on a narrow base.

Medium stems

This is the length most homes are equipped for, because the ordinary glass vase people already own falls in that range.

Send flowers to someone whose home you have never seen and the middle of the range is the safe answer. It fits what they have, it needs no improvising with a jug, and it will not be trimmed down by half on the first evening.

Long stems

Long stems earn their length in volume rather than on a table. A high-ceilinged hall, a floor vase, a reception counter, a stage presentation: in those settings a short bouquet simply disappears, and the extra height is what makes the flowers register from the other side of the space.

Long roses also travel in a long flat box, carried horizontally, and that box should be opened on arrival rather than stood upright in a corner until the evening.

One thing to remember about all of them

Whatever length you order, the bouquet gets shorter as the week goes on, since every recut takes a little more off the stem, and by day six a bunch can sit noticeably lower in the same vase than it did on the first day.

If height matters for a particular date, order one step longer than the measurement suggests.
