Marshmallow bouquets in Baku: what zefir is and how to choose one
What the section sells as marshmallow bouquets in Baku is zefir: whipped fruit purée, usually apple, with sugar and egg white, set with pectin, agar or gelatin, dry on the outside and soft within. The grid also holds a second line, chocolate flowers and bouquets with berries, so the first choice is simply which sweet you actually want.
What a marshmallow bouquet is actually made of
Zefir starts as fruit purée, usually apple, beaten with sugar until it turns pale and airy, then egg white goes in for lift. Pectin, agar or gelatin hold the shape once it is piped and left to set.
The sweet has a longer history than the name in this section suggests. Zefir grew out of Russian pastila, a much older fruit paste, and gained its whipped egg white in the nineteenth century, following a French technique. A day or two of drying gives each piece a thin, slightly firm skin while the inside stays soft.
The grid runs two lines side by side. One is zefir: the Marshmallow Box and Marshmallow Box No. 2, the Marshmallow Bouquet Brinje, the Sweet Marshmallow Bouquet and its Delicate version, the Marshmallow Tulip Bouquet and the Lavender Marshmallow Bouquet. The other is chocolate: the Chocolate Orchid Bouquet, the Chocolate Bouquet with Berries, "Freya" and "Alma" Chocolate Flowers.
Names describe the arrangement rather than every ingredient inside it, so the two useful questions are simpler ones: is a box or a bouquet the right shape for the address, and does the occasion call for zefir or chocolate.
How zefir and chocolate keep once delivered
Cocoa butter melts at thirty-four to thirty-eight degrees, just under body temperature, so a warm room or a sunny windowsill can soften a chocolate bouquet quickly. If it softens and then sets again, a pale bloom can appear on the surface. That is not spoiled chocolate, only cocoa butter that has set again in a different pattern.
Zefir behaves differently: it stays dry on the outside and soft inside, which is the texture it is meant to have from the moment it is made, not a sign of how long it has travelled.
Marshmallow bouquet delivery with flowers and a card
Either line goes into the basket alongside a bouquet, and a card with a message is added at no extra cost. Before the courier leaves, the finished order is photographed and sent to the sender, and anything about it can still be changed up to that point.
The card can stay unsigned: the courier carries only the recipient's name and address, nothing about who sent it. An exact address is not required either, a phone number for the recipient is enough to arrange delivery. Most orders go out on the day they are placed, and the timing for a given bouquet sits on its own product card; the delivery page sets out how it works. Payment runs through Visa or Mastercard, and the total shown in the cart is the one charged.
A good place to start is the wider gifts to go with bouquets selection, where zefir sits alongside strawberries dipped the same way. For an office or a hotel room without a vase to hand, pairing either sweet with flowers in boxes keeps the whole gift self-contained until someone picks it up.
