Chocolate strawberries and berry bouquets: a gift measured in hours
Strawberries are the only thing in this catalogue whose shelf life is counted in hours rather than days. Everything else about them follows from that.
The berries are dipped on the day of delivery. Not the evening before, not first thing "to get ahead": the chocolate shell is only sealed for the first few hours, after which the fruit releases juice under the glaze and dark patches appear through white chocolate. A finished box keeps in a fridge for a day and looks its best for six to eight hours.
Ordering and timing
A delivery window matters more here than on any other order. A box that arrived two hours early and waited in a car is not the same gift as one handed over on time.
If the recipient may be out, move the delivery rather than leaving the box with a neighbour or at a reception desk. A warm lobby is the worst possible place for chocolate.
Heat
In a hot climate the rule is stricter: the walk from car to door should take minutes, not half an hour. Through summer, and year-round in hot cities, deliveries are set for early morning or evening and the box travels in a cool bag. Milk and white chocolate soften before dark chocolate does, so dark is the sensible choice in heat.
At home the box goes straight into a fridge — but never a freezer. Frozen and thawed berries lose both texture and appearance.
Berry bouquets and boxes
Combining flowers with fruit is harder than it looks, because the two want different temperatures and different humidity. Arrangements are built so the fruit sits in its own compartment rather than among damp foliage.
A combined box works well as the only gift of the day: it needs neither a vase nor a plate.
When it is the right choice
Berries win where flowers have already been sent — the second or third occasion in a row, a discharge from hospital, an apology, a colleague's birthday where a large bouquet would be too much. They lose where the gift is meant to last.
Allergies
Chocolate, nuts in the topping and the fruit itself are three common allergens at once. If the box is going to a child in Hong Kong, or to someone whose diet you do not know, ask first. The recipe can be changed before assembly, not after.
