Peonies delivered in Paris: varieties, season, and the cut stage that matters

The peony is one of the most emotional flowers in Parisian floristry. The full ball-shaped bud, the soft honey scent, the dense layers of petals create an effect that roses and ranunculus simply can't match. It's the favourite of wedding designers at George V and Le Bristol, the number-one pick for milestone anniversaries and Fête des Mères.

This category covers herbaceous, tree, and Itoh hybrids. Stock arrives from Dutch greenhouses via Aalsmeer, from Provence plantations in Drôme and Vaucluse in summer, and from Chile and New Zealand off-season. That keeps peonies in the catalogue nearly year-round, well beyond the natural May–June window.

Key varieties in stock

Each peony variety solves its own task — from a classic romantic bouquet to a complex wedding arch at the Ritz. They differ in bud form, palette, fragrance, and vase life.

• Sarah Bernhardt — the 1906 classic, soft-pink double bloom up to 18 cm, honey scent. Named after the Comédie-Française actress. A safe universal choice for weddings.
• Karl Rosenfield — dark red, dense bud. Right for a dramatic wine palette and autumn bouquets.
• Festiva Maxima — white with a raspberry fleck at the heart. A wedding-flora staple in the 6th and 7th arrondissements.
• Coral Charm — shifts from coral-peach to creamy yellow as it opens. The headline variety of Paris Instagram florists in the 2020s.
• Duchesse de Nemours — soft white with a cream centre, light vanilla scent, romantic delivery.
• Itoh hybrids (Bartzella, Cora Louise) — a cross between herbaceous and tree peonies, larger blooms and longer vase life than standard types.

Cut stage and why it matters

The golden rule with peonies is the "marshmallow" stage — coloured but still soft to the touch. If the bud springs back like marshmallow under light pressure, it will open in 1–2 days and last 7–9 days. Hard and green: may never open. Already fully open: 2–3 days at most.

Every batch passes a florist's manual check. Only marshmallow-stage buds ship out — this gives the Paris recipient the full bloom cycle, not the final withering stage a day after delivery.

Seasonality and logistics

The natural northern peony season runs late May to mid-June. In Provence the local peak hits 20 May to 10 June: prices are at their lowest and variety choice at its widest. From July to February the southern-hemisphere supply takes over — Chile, New Zealand, Australia. Off-season prices run 2–3 times higher, but quality and vase life hold.

For Paris we sync the delivery date with the opening moment. This matters especially for weddings and anniversaries: the peony must open at the right hour, not the day after the event. The manager will ask for the event time and pick the batch accordingly.

Second by volume: anniversaries (25, 30, 35 years of marriage are routinely marked with peonies). Third: large corporate gifts and Fête des Mères orders.

Delivery specifics in Paris

Paris has a temperate oceanic climate. Winters at +3…+8 °C with frequent rain; summers at +18…+28 °C with short heat waves up to +35 °C in July–August. Year-round humidity of 60–80% is a plus for peonies — the bud doesn't dry out in transit. Aalsmeer supply arrives via the Charles de Gaulle cargo terminal (CDG Cargo) in 12–18 hours.

Care at home

After delivery, recut the stems at 45°, strip all leaves below the water line, place in a tall vase with cool water. Change the water every 2 days. Keep away from fruit and radiators — ethylene and the dry heat of Paris radiators cut peony life in half.

During the July–August Paris heat, move the bouquet at night to the coolest room or to the fridge. This metabolic pause gives the peony 2–3 extra days of bloom — straight plant physics, no chemistry needed.
