Head shape varies far more in peonies than in roses. Some open into a dense ball of tightly packed petals, others fall open into a loose bowl with a visible centre, and the same colour name covers both.

Colour behaves differently at this count

A single shade across twenty-one heads reads as one solid object from the other side of a room. Two close shades, a pale pink with cream or a coral with white, give the dome some depth under evening light without breaking it up.

Insisting on an exact shade is the first. Pink is generally available, white and coral come and go, and a rigid colour requirement on a large count often ends in a substitution nobody wanted on the morning of delivery.

Asking for open flowers when the date is still days away is the second. They will be past their best by the time they are handed over, and peonies go from full bloom to falling petals quickly.

The third is ignoring stem length. Long stems suit a tall vessel and give room for daily trimming, short ones suit a box or a low bowl, and a bouquet arriving with the wrong length forces the recipient to improvise.

What to say when you place the order

Say where the bouquet is going and what it is for. A bunch destined for a hospital room, an office reception or a birthday table calls for different varieties and different stages, and the shop can only judge that if it knows.

Give a colour range rather than a single name, mention scent either way, and state the date the flowers should look their best rather than the delivery date. Those three sentences do more for the result than any amount of scrolling through photographs. If the flowers are going to a recipient in Prague you cannot reach by phone, add an instruction to put them in cold water straight away, because thick peony stems dry out quickly out of water.
