Table centrepieces: what a long evening does to them

A centrepiece is the only flower format that has to work while people are eating. It sits inside the traffic of a meal for five or six hours, and most of what goes wrong with it has nothing to do with flowers.

Scent is the first thing to get right.

Put a heavily perfumed flower in the middle of a dinner table and it argues with the food all evening. Lilies and hyacinths are the usual culprits, and the resin of fresh conifer is stronger in a warm room than it is in a shop. Cinnamon, orange and clove smell like the season and still crowd a table. A centrepiece can be quiet and let the meal have the air, which is why the good ones tend to lean on greenery, cones and unscented blooms.

Heat, traffic and spills

Dishes come and go around it. A hot serving plate set beside a low arrangement wilts the nearest petals within the hour, and steam rising past greenery does the same more slowly. Wine gets poured over it, sleeves catch the outer branches, and someone will move it to make room for a dish that arrived unannounced.

That is an argument for a piece with a solid base and no loose parts. Anchored in foam, it can be picked up in one hand, shifted to the sideboard and brought back without losing a single stem, which is more than a vase of water on a crowded table can promise.

Height matters too, and the test takes a moment: sit down and look across at the opposite chair. If greenery blocks the person you would be talking to, the piece is too tall. Low and spreading works, and so does tall on a narrow stem with everything lifted above head level, whereas anything that ends at face height is the version people quietly push aside halfway through the meal.

Candles at close quarters

Candles do the one thing the rest of the arrangement cannot, which is move. Fresh greenery barely catches, but after a few days in a heated room the needles dry out and go up quickly together with cones and wood. Keep a clear hand's width around each wick, use a glass or a holder rather than pushing the candle straight into the foam, and never leave a lit piece alone in an empty room. Once the needles come away at a touch, swap in battery lights and keep the look without the risk.

After the plates are cleared

The piece carries on for weeks, which is unusual for something bought for one night. Fresh flowers in the foam finish first and come out one at a time, and what stays is conifer, berried branches and dried material that need nothing but water in the base and distance from the radiator.

Move it off the table once the meal is done. A windowsill away from the heating is the best place in most flats, and the arrangement will look the same in a week as it did at midnight.
