Gypsophila bouquets: the bunch that outlives the week

Cut flowers have a scheduled ending. You watch a rose bouquet decline over a week or two, then throw it out, and the whole transaction is understood by both sides from the start. Gypsophila is one of the few things on the counter that can skip that ending entirely, because it dries without collapsing and simply carries on standing there.

That is the practical case for buying it by the armful rather than as a filler behind roses.

Drying it, without doing anything clever

The stems are thin and woody and the flowers are tiny, so there is very little moisture to lose and almost no weight for a dried head to drop. Stop topping up the water and let the bunch dry where it stands, out of direct sun. Over a fortnight or so the white settles into a warm cream, the shape stays more or less as it was, and the bunch turns from fresh flowers into something closer to a dry arrangement. Hanging it upside down in a dark, airy cupboard is the tidier version of the same process, and it keeps the stems straight rather than letting them relax outwards. Neither method needs sprays, glycerine or a hairdryer.

Dyed stems behave differently. Colour taken up through the water fades unevenly as the bunch dries, and sprayed colour tends to keep its tone while the stems underneath look obviously painted.

Sunlight is the one thing that ruins a dried bunch, exactly as it does with preserved roses. Ultraviolet pulls the pigment apart, so a windowsill turns cream to a dull grey within a season. A shelf against an interior wall keeps the same bunch presentable for months. Dust is the other enemy, and the only safe treatment is a cool hairdryer on its lowest setting held well back, since a cloth simply breaks the flowers off.

What it does to a room

Fresh, it behaves like a cloud rather than like a bouquet. It fills a large volume with almost no visual weight, which is why a single armful can hold a corner of a room that a dozen roses would leave looking sparse.

Scale is the thing people underestimate when ordering online. A photograph flattens the depth, and the bunch that arrives is usually wider than the picture suggested.

The honest warnings

There is a smell, and it divides people. Sweet with a green, slightly sour edge underneath, it grows more noticeable in a closed room towards evening, and a whole armful is far stronger than the few sprigs anyone remembers from a mixed bouquet. Some people find it faintly musty. It fades considerably as the bunch dries, so if the scent bothers a recipient, the dried stage is the one they will enjoy. Airing the room daily deals with most of it. Buying a smaller bunch deals with the rest.

The second warning is mess. Tiny dry flowers and side shoots drop from the base of the stems from the first day, and they carry on dropping quietly for as long as the bunch is in the house. A florist who has cleaned the stems properly reduces this a great deal. Nobody eliminates it, so a hall table beats a dining table.

Who it suits

Gypsophila bouquets go to people who like flowers and forget to look after them. There is no daily water change to miss, no bent neck to prop up, and neglect at the right moment turns into the dried version instead of into a bin bag.

The same qualities make it awkward for a formal occasion, where the recipient expects to see money on the table. For a housewarming, a studio, a first flat or a friend in Tashkent who moves often, the lightness is the point rather than a compromise.
