Wedding anniversary flowers and the days that follow

Most bouquets for this date are judged twice. Once when they arrive, and again on the fourth or fifth morning, when the person who received them decides whether to throw the whole thing out or pull four good stems into a smaller vase. The second verdict is the one people remember, and it is settled almost entirely by handling at home.

Very little of that happens in the shop.

The first hour after delivery

A stem that has travelled dry seals its own cut within roughly half an hour. Water stops moving up while the head keeps evaporating through its petals, so the bouquet looks tired on day two and the florist gets the blame. Take a couple of centimetres off the bottom at an angle, ideally under running water, and get the stems into a clean vase straight away.

Clean matters more than cold at that stage. Bacteria in old water block the cut faster than the flower itself ages, which is why the vase gets rinsed properly every time the water is changed, and why any leaf that would sit below the waterline comes off before the stem goes in.

Heat costs days. A radiator under the console table, a sunny sill or the top of a fridge will take a week down to four. A fruit bowl nearby does worse, because ripening apples and bananas give off ethylene, and roses read that as an instruction to open and drop.

Buy for the household you actually have

Some homes will never recut a stem or change water, and there is no point pretending otherwise. Chrysanthemums, carnations, alstroemeria and gerberas with a glued collar tolerate that treatment for well over a week, whereas hydrangea, tulips and most garden-style stems do not and fail quickly enough for the failure to be noticed.

Roses sit between the two groups, and how long they hold depends less on the variety than on the water.

Something still standing next year

The date returns every twelve months, which is the honest argument for preserved roses. Their own sap has been replaced with a glycerine-based solution, so they need no water, drop nothing and hold their look for one to three years in a box or under a dome. What shortens that is light rather than time, because ultraviolet breaks the pigment down and red goes brown before any other shade. The shelf therefore matters more than the order: a blank wall away from the window will carry the arrangement through to the next anniversary in the state it arrived. Scent is the trade, since it leaves the bud along with the sap, and nobody notices until a guest leans in to smell it.

A mixed approach works for people who like both. Fresh stems for the evening itself, a small preserved piece that stays on the shelf, and the second one quietly does the remembering.

Round numbers, and the hour of delivery

A tenth or twenty-fifth year usually means a room with guests rather than two people at a table. Flowers then compete with dishes, glasses and elbows, so a low arrangement in its own container beats a tall bouquet that has to be held, unwrapped and rehomed while the food goes cold. Height is the useful test: two people seated opposite each other should be able to see one another over the top of it, otherwise the arrangement ends up on the sideboard before the starter is finished.

Volume is a question about the room, not about the number of years.

An order timed for the evening beats one timed for the morning, because a bouquet left at a Zurich reception desk for eight hours arrives twice: once to the concierge, and much later, much flatter, to the person it was meant for. If it is being carried to a restaurant, ask for a dry wrap rather than a wet one, since a soaked collar drips through a coat sleeve for the entire journey.
