The peony is one of the most emotional flowers in the trade. A full, globe-shaped bud, a light honey scent, dense layers of petals — an effect no rose or ranunculus can copy. Each variety solves its own task — from a classic romantic bouquet to a complex wedding arrangement. They differ in bud shape, colour range, scent, and vase life.

  • Sarah Bernhardt — a 1906 classic, pale pink double bud up to 18 cm, honey scent. The safe, all-round choice for a wedding or anniversary.
  • Karl Rosenfield — a deep red, dense peony. Suits a dramatic wine palette.
  • Festiva Maxima — white with a crimson fleck at the centre. The most photogenic white peony, a wedding-flower classic.
  • Coral Charm — shifts from coral-peach to creamy yellow as it opens. One of the most fashionable varieties of the 2020s.
  • Duchesse de Nemours — soft white with a cream centre, a light vanilla scent, a romantic look.
  • Itoh hybrids (Bartzella, Cora Louise) — a cross of herbaceous and tree peony, blooming longer and larger than the usual.

Cut stage and why it matters

The key rule when buying peonies is the "marshmallow" stage. That's a coloured but still soft-to-the-touch bud. If the peony springs back like a marshmallow when squeezed, it will open in 1–2 days and last 7–9 days. If the bud is hard and green, it may never open. If it's already fully open, it will last 2–3 days at most.

Every batch is hand-checked by a florist against this test. Only "marshmallow" buds of the right firmness go out — that gives the recipient in Auckland the full bloom cycle, not the final fading stage.

Seasonality and logistics

The natural peony season in New Zealand is late spring and early summer, roughly November to early January. The cool South Island opens the cut first, and by Christmas the market is full of local flower — the freshest and most affordable peony of the year. Summer humidity and close air are the peony's main enemies in Auckland: the split system dries out the air and the bud fast, while stale air triggers rot on the petals. Keep the bouquet in the coolest room with some air movement, away from the direct flow of the air conditioner. On warm days move the bouquet to the fridge overnight — that gives the peony 2–3 extra days of bloom.
