Roses, chrysanthemums, alstroemeria and carnations come in bulk without drama, which is why the batches that work tend to be built from them. Head size is the other thing to fix in advance, since two roses of the same variety can differ enough to show once the bouquets are lined up on a table. If the class would rather make one statement than twenty, a single dense arrangement in a low box reaches home in far better condition than twenty separate wrapped bundles.

Size is agreed once and applied to all of them. A teacher receiving five bouquets in an hour has to hold them, keep hold through the formal part and carry them to a car in one trip, so a medium build on a short stem is worth more than an armful on long stems.

The hours between the bucket and the vase

A stem lifted out of water at nine in the morning will not see a vase until eight in the evening. Roses with firm cups, carnations, chrysanthemums, alstroemeria and gerberas with a reinforced neck go through that day evenly. Hydrangea gives up first, with a large evaporating surface and almost nothing in reserve. Tulips open in the sun and let their heads fall sideways, while thin field stems look tired by the middle of the ceremony.

That one gets handled constantly. It is passed along for group photographs, held under an arm, put down on a step and picked up again, and a loosely tied armful comes apart after the second hand over. A compact build with a firm structure takes the same treatment and keeps its shape.

Colour here is chosen for the camera. In a crowd of twenty pale bouquets the white and cream ones merge into one bright cloud with no detail, while a saturated tone reads clearly and then argues with a bright dress.

Ordering, and the evening afterwards

The date is known months in advance and the orders still arrive in a single wave. Classic roses, large chrysanthemums and white hydrangea go first, so by the end of that week the cold room holds what nobody collected rather than what was in the photographs. Bouquets for the last bell in Chisinau are worth agreeing about a week ahead, and that stops being optional once twenty of them have to match.

The evening job is short. Take off the outer wrapping, cut the stems at an angle, stand everything in a tall bucket of cold water and leave it in the coolest room in the flat until morning.
