Juliet spray roses: a week of uneven opening
The bunch you are handed and the bunch standing on the table four days later are not the same object. Each stem holds a cluster, the central bud runs ahead of the side ones, and the side ones take their turn only after it has finished, so the arrangement keeps rearranging itself while you watch.
That is the whole character of the variety, and it decides when the bunch should be bought.
Day one
Stems usually arrive with the central bud showing colour and the cup still shut, and the smaller buds around it tight and slightly green at the tip. The apricot tone is at its deepest here, because the petals are still layered over one another and the shadow inside the cup darkens everything.
Nothing much happens on the first evening beyond the flowers drinking.
The middle of the week
Now the central cups open, and they open in the way garden roses do rather than the way a tea hybrid does. The petals are numerous and short, and the outer ones roll back while the inner ones stay folded over the centre. The head keeps a rounded outline instead of flattening into a star. From across a room the bunch looks like a small heap of peach spheres at different heights. This is the stage most people picture when they order.
The tone shifts too. Fully open, the flower loses some of its depth and reads lighter, closer to a soft skin colour than to apricot, so a bunch photographed on day one and on day four gives two different palettes.
Side buds are still holding back at this point, which is exactly the reserve you want.
The second half
The centre bloom goes over first, and it goes over visibly, with the outer petals turning translucent at the edge. Cut it off at the base of its own short shoot rather than pulling it out, and the cluster tidies itself immediately. Within a day or two the side buds take the space, smaller than the head they replace, but fresh, and the bunch stands up to the end of the week without an obvious gap.
Pulling a spent head out by hand tears the shoot and takes the neighbouring buds with it, which is the commonest way people shorten the life of a spray bunch.
Timing the purchase
Work backwards from the day that matters. For a bunch that has to look full at a dinner or a shoot, order two or three days ahead and keep it in a cool room, since warmth speeds the cups open and there is no way to slow them once they have started.
For a present handed over in person, tight stems are the better choice: the recipient gets the opening rather than the ending, and Juliet spray roses shown at their closed stage still read as generous because of the number of buds on each stem.
Water discipline does more here than anything else. The stems are thin and they block quickly, so a fresh slanted cut every second day and clean water in a washed vase are what let the side buds reach their turn at all.
