Eleven peonies: how the spiral holds at this size
A hand-tied bunch is built as a spiral. Every stem goes in at the same angle, crossing the ones already held, and the gathering point stays in one hand while the heads fan out above it. At eleven stems that grip is close to the limit of what one hand can hold comfortably.
The spiral is why a good bunch stands on its own stems on a table and a bad one falls over.
What the florist is doing while building
The first three or four stems set the angle for everything after them. If they go in steep, the finished dome is tall and narrow; laid flatter, the same stems give a wide low shape that suits a broad vase.
Every stem is added in the same rotational direction, without exception.
Peonies make this harder than roses do. The stems are thick, so the gathering point grows fast and the hand runs out of grip before the count does; the heads are heavy, so the bunch wants to tip forward; the leaves are broad and catch on each other as a new stem slides in. Above roughly this count many florists switch hands, rest the bunch on a bench, or build in two halves and marry them, and all three show in the finished outline if done carelessly. Watch the hand rather than the flowers. A florist who keeps rotating the bunch between additions is building a spiral; one who holds it still and pushes stems into the gaps is filling a hole.
How to tell a spiral from a bundle
Look at the stems below the tie. In a spiral they splay evenly in a cone, all at the same angle, and the bunch stands upright on the bench without support.
In a bundle they run parallel, and the whole thing rolls onto its side the moment it is set down.
The second check is the dome. A spiral gives an even curve where each head sits slightly lower than its neighbour towards the edge; a bundle gives a flat top with a couple of heads standing proud, and those are the ones that get knocked in transit.
When a frame earns its place
At eleven stems none is needed: the stems lock one another and the tie holds the whole thing, which is exactly why this count travels well and survives being propped in a car footwell.
Larger counts are a different job. Past a certain size the outer stems carry no weight and slide, so a collar of greenery, a stem grid or a card cone goes in to keep the outline, and the bunch stops being a pure hand-tie. You can feel the difference by lifting one.
That is also where the price stops tracking the count. A framed bunch takes longer to build than an unframed one with the same flowers, and the extra time is real work rather than presentation.
Living with it afterwards
Keep the tie on when the bunch goes into water, because it holds the spiral and a bunch that has been untied never sits the same way again in a vase.
Trim through the whole gathered bundle in one cut so that the ends stay level. Check the water on the first evening rather than the second morning, since a dense gathering of thick stems empties a vase faster than the same count of anything thin.
Eleven peonies handed to somebody in Tokyo will usually go straight into the nearest container, tie and all, and that is the right instinct.
