### Chrysanthemum bouquets in Dubai: two flowers under one name One word in the catalogue covers two quite different things, and the photograph rarely settles which of them you are ordering. The difference shows up on the table, in the hand, and in what the bouquet costs to build. It is worth a question before anything else. Ask which form you are buying. A single headed stem carries one bloom on a straight stalk, sometimes as broad as a small apple, and nothing else grows above the leaf. Five of those stems give you five separate points of colour with air between them. That reads well close up, in a hand over, and in any arrangement meant to be looked at from one side. It is also the form that photographs cleanly for an office reception, where the flowers sit on a counter and everyone passing sees them from the same angle. Spray stems branch near the top, and each stalk holds five to fifteen smaller heads instead of one. Counted by the stem you appear to be buying less. Counted by volume you are buying a dense mass with no gaps in it, which is why a spray bouquet looks fuller than a single headed one at the same stem count. > "Customers ask for a large bouquet and mean volume. Large heads sit higher, sprays fill the space beneath them, and the eye reads the arrangement in layers. Put them at the same height and the small heads vanish behind their neighbours, visible only from the side. Foliage is the one thing both forms share, and it is the only part with a smell. Crush a leaf and you get something bitter and herbal, closer to wormwood than to anything floral, which is why we strip the lower third before a bouquet goes into a closed box. Both forms survive a delivery nobody is home for. A box waiting a few hours in a cool hallway costs a chrysanthemum very little, which is one reason it goes out to apartment towers and offices where the handover time is a guess rather than an appointment. #### Where the two forms end up in this city Offices in DIFC and Business Bay take single headed stems more often. A desk or a reception counter has limited depth, the bouquet is seen from the front, and separate heads hold their shape for the fortnight nobody spends topping up the vase. Homes and hotel rooms take sprays. Family dates in Downtown, Marina and Palm Jumeirah, a birthday dinner, an arrival gift waiting in a room at Address Downtown or Four Seasons: all of those want mass rather than individual blooms, and a spray bouquet fills a vase that would look thin with the same number of single stems. Supply behind both is the same. Greenhouse production in the UAE puts chrysanthemums on the bench in February and September alike, so the month you order in changes very little about what we can build. Delivery takes 2 to 4 hours across the city. In summer, with the air reaching 40 °C, the box goes out with insulated packing and never waits in the sun, and the coastal humidity is the reason we keep it closed until the handover.
