Check the waterline first, because leaves left below it are the commonest shortcut of all. A submerged leaf spoils the water within a day, and in a bouquet of four crops that water is shared by everything standing in it.

Then look at the heads from the side.

Uneven heights and a sagging outline show there straight away, where a view from the front flatters almost anything. Bruised outer petals on roses are normal and get peeled off. Brown edges further in are a different matter and worth raising while the courier is still at the door.

The vase decides more than people credit. A narrow neck squeezes the stems together and the ones caught inside the bunch never reach the water properly, while a vessel that is too wide lets the whole thing spread and lose its outline in an evening. Three habits do most of the work:

  • Cut the stems on a slant and strip everything below the waterline.
  • Change the water daily and wash the vase instead of topping it up.
  • Take spent heads out as they go rather than waiting for the whole bouquet to tire at once.

The hours the flowers spend out of water

Mixed bouquets in Dubai often spend part of their first day away from a vase. Hotels in Downtown, Marina and Palm Jumeirah and offices in DIFC and Business Bay take the handover at a counter, and the flowers wait there until somebody comes back to the building. That waiting is why we ask what time the recipient will be at the address before agreeing a composition at all.

The city has a hot desert climate and a summer that runs to 40 °C with coastal humidity behind it. Insulated packing goes on through those months and the bouquet stays out of direct sun at every stop. Once it is indoors, keep the vase away from a sunny window and away from a fruit bowl, since ripe fruit gives off ethylene and ages every stem at once.

The build comes from what the city receives. Dutch roses at 60 to 90 cm and Ecuadorian roses up to 120 cm take the dominant positions, greenhouse tulips and chrysanthemums from the UAE support them and hold their heads longest in the same water, and Dutch peonies arrive outside their own season as an accent in the centre.

A rushed build gives itself away in the same two places every time. Foliage left under the water is the first, and heads packed at a single height so the outline reads as a flat disc is the second. Neither is fatal on the day, and both cost days later.

Rebuilding is a stage rather than the end. When half the flowers are done, the survivors make a smaller arrangement that stands for several more days, and in a hot month that second bouquet is often the one people remember.
