### Hyacinth bouquets in Dubai: a short season and a narrow palette The commercial season for hyacinths runs from midwinter through early spring. It is built on bulbs chilled and then forced into flower under glass, and outside that window the flower thins out until the choice narrows to whatever is left on the bench. Order early in it. That is the difference between picking a colour and accepting one. Colour runs from white and cream through pink, apricot, lilac and a deep blue that photographs brighter than it looks indoors. The blues and purples are what people picture when they order. They are also the ones that surprise people on arrival, because the spike is dense enough that a dark colour reads as a solid block, especially under evening light. White and cream are the safer choice for a room where the flower has to sit near furniture. Hyacinths arrive in the months when none of that applies, and the timing is one of the few things about this flower that works in the city's favour. Indoors is a separate question. Warmth speeds the bells open and shortens the display by days, and it pushes the perfume out all at once instead of letting it build. Direct sun does the same thing faster. Delivery runs 2 to 4 hours across Downtown, Business Bay, Marina, JBR, Palm Jumeirah and DIFC, and we work 9 AM to 10 PM. The spike itself travels well: small bells, a thick stem, nothing that bruises in a box. Where we would not send them is an office. A meeting room cannot be aired properly, and nobody sitting in it can move away from the smell. Two practical notes carry through whatever colour you pick. Water goes shallow and gets changed often, because the fleshy stem softens where it stands, and the white heel at the base of the stem stays on, since that pale section drinks better than the green above it. Ordering ahead matters more on this flower than on most. The window is short, the crop is forced rather than continuous, and a specific shade in a specific week is something we would rather confirm on the day the order goes in than promise a month out.
