### Iris bouquets in Dubai: handed over shut, on purpose An iris arrives closed. What comes out of the box is a tight green spear with a thread of colour along one seam, and the flower itself is still a day away. Say so as you hand it across. Growers cut and ship in bud because an open iris is thin enough that almost any packaging creases it, and across a 2 to 4 hour delivery window that decision is what stands between a bouquet and a box of damaged tissue. The person receiving it sees cones and leaves, and the volume in their hands comes mostly from foliage. Without a word of explanation the first reaction is usually quiet disappointment. #### The sequence in the vase Within a day of standing in water the bud unwinds. Three outer segments fold down and out, three inner ones stand upright, and the flower ends up roughly twice the size of the object that was delivered. What was a seam of colour becomes the whole surface. A day or two later that same flower is going, the segments softening and twisting into a damp rag, and the next bud on the stem takes over. Pinch each spent flower off at its base with your fingers and the stem carries on with its remaining buds looking clean. Water should be shallow and cool. The lower stem is fleshy and turns slimy when half of it stands submerged, which fouls the water and blocks the cut. Two fingers in the vase is plenty, topped up rather than deepened. Warmth speeds all of this up. A flat kept warm runs the whole cycle in half the time, and a bouquet that had a week in it finishes in three days. #### Where it works in this city Iris is close to scentless, which is why it ends up in DIFC meeting rooms and in offices where a strong lily would be a problem by lunchtime. The leaves are long straight blades that hold a vertical line with no added greenery, so a bunch in a plain glass cylinder needs no filler and rarely improves with one. Tulips from the UAE greenhouses are the pairing worth the trouble. Both want cool water and a shallow vase, and both keep growing after they are cut. Dutch roses want deeper water and warmer handling, so in a shared vase one of the two is always the loser. Four things worth sending with the order: - The day rather than just the hour, because iris rewards somebody who is in for the next few days. - Whether the address is a home or an office floor. A meeting room table gets its water checked once, if that. - Whether there is a low vase there already. - What the bouquet is for. Something that has to look open at a Thursday dinner needs to arrive on Tuesday, and we will say so rather than send it on the day and hope.
