### Rose bouquets in Dubai: the hour after the courier leaves Roses fail in one particular way. The bud looks perfect, the petals are firm, and then the neck just below the head folds over and the flower hangs upside down while everything else in the vase carries on looking fine. The cause is air, not age. A cut stem draws water up a column of narrow vessels. Let air into that column, by leaving the stem dry for too long or by cutting it in the open, and the bubble sits there and blocks the flow. The head is the furthest point from the cut and the first to be starved, which is why it gives way before anything else. No amount of flower food reverses it. Warm air makes the same mistake more expensive. Water leaves a petal faster at 40 °C than it does in a cool room, so a stem already struggling to drink runs a bigger deficit with every hour that passes. That matters here more than it does in a cooler place. Deliveries run 2 to 4 hours, the box travels with insulated packing and never stands in the sun, and summer air outside reaches 40 °C. All of that is under our control. What is not under our control is a box left by a door while the recipient is still at the office, and the clock on the air lock keeps running the whole time it sits there. So the first hour is the part worth planning: - Open the box on arrival rather than in the evening. - Recut every stem at an angle, taking a couple of centimetres off with a sharp knife. Secateurs and kitchen scissors crush the tissue instead of slicing it, and a crushed end drinks badly. - Strip every leaf that would sit below the waterline. Submerged foliage rots within a day or two, the water clouds, and bacteria block the cut end as effectively as any bubble. - Fill the vase before you start cutting, so no stem waits on the counter. Leave the foliage that stands above the water. It is working, and a bare green stick in a glass looks like a shop display rather than a bouquet. Thorns can stay too, unless they are in the way, since scraping them off tears the skin of the stem and opens another route for bacteria. Where the box lands changes the risk more than the distance does. An office in DIFC or Business Bay signs at the floor and the flowers are in cooled air within minutes, so the air lock never gets a chance. Apartments in Downtown, Marina and JBR are the ones worth timing, and a hotel in Palm Jumeirah sits somewhere between the two. Agreeing a time with the recipient is worth the extra message. A box that is expected gets opened within minutes of arriving, while a surprise box waits by a door until somebody comes home from work. The surprise usually costs a couple of days of vase life, which is a fair trade only when the recipient is definitely in. Length is the other decision, and it is best made before the box is packed. Dutch roses run 60 to 90 cm and drop into almost any vessel a kitchen already has. Ecuadorian stems reach 120 cm, carry a heavier head, open slowly and hold longer, and they need a tall vase with weight in the base. Change the water every two days, wash the vase properly while you do it, take a centimetre off the stems each time, and keep the glass away from a window in direct sun and out of the draught from an air conditioner. Guard petals need no action at all: the one or two coarse outer petals on each bud did their job in transit and peel away to a clean bloom underneath.
