White peonies in Dubai: heat first, light second
For the flower itself, heat matters more than light. A tight white bud opens in stages across several days in a cool room and races through the same sequence in one warm evening, finishing as a flat open rosette that starts shedding petals. Outside, summer on the coast reaches 40 °C with humidity behind it, and inside, the cooling that makes the city liveable is dry and moving. Both of those act on the same flower in opposite directions.
Where the vase actually goes
Away from the window is the first rule, and it holds all year rather than just in summer. Direct sun through glass warms the petals, flattens the folds and blows out the top of the flower in any photograph taken that afternoon.
Away from the air conditioning outlet is the second. Dry moving air pulls water out of the petal edges, and on a white peony a dried edge browns into a visible rim within hours, where the same damage on a burgundy variety would go unnoticed for a day.

Three placements that shorten the week:

What works instead is dull by comparison. A plain wall, a spot back from the glass, a wide-necked vase with plenty of water in it, leaves stripped below the waterline and the water changed daily with the stems recut on the slant each time. Peony stems are thick and stiff and will not sit in a narrow opening, so the vessel decides more here than the arrangement does.

Beyond that, white travels well socially. A birth, an anniversary, an apology, a senior colleague in a DIFC office: all of these are situations where red would say more than intended, and white says the intended thing without a card explaining it.
Under artificial light it also outperforms the darker shades. White peonies stay visible at low light long after deep red has collapsed into shadow, which is worth knowing when a bouquet is going to a hotel restaurant in Downtown or Marina and will only ever be seen after sunset.
