Fifteen peonies in Dubai: two hands, a doorway and whoever answers it
Fifteen peonies need two hands to hand over and a clear doorway to get through. Narrow hallways, revolving doors and crowded lifts all catch the outer heads, which is why a courier turns the bunch stems first through a gap. The last stretch before the door is where a large bunch loses its outline.
Somebody has to be there. That sounds obvious until you look at what happens when nobody is.
Left with a neighbour, an armful this size gets put down on its side, and everything the box protected is undone in a second. Concierge desks rarely have the depth to stand it upright, so it ends up leaning against a wall behind the counter. The heads facing the wall take the weight. By the time the recipient collects it the outer ring is flattened on one side, and no amount of fluffing brings that back. If you cannot promise a person at the address, agree an hour with us instead of a day.

What the object actually is
A peony head is heavy and sits on a thick stem carrying a large leaf of its own. Fifteen of them build a dome that holds its own shape, so the bunch needs no frame and no filler underneath, and the stems lock each other in place. That also makes it wider than fifteen roses by a clear margin. Width is what catches on things, and width is what people forget when they picture the order.
Fifteen closed buds look modest on the doorstep and generous by the weekend. That gap catches out anyone ordering for the same evening, so we name the stage out loud before the order is confirmed.
Where these bunches go
Downtown, Business Bay, Marina and JBR sit close together, delivery runs 2 to 4 hours, and we work 9 AM to 10 PM, so an evening handover is usually settled the same morning. DIFC offices take a different version of the same order, because a business handover means a reception desk, a meeting room table and a bunch that still has to look composed once it has stood there a while. Family dates go the other way, straight into somebody's arms at the door. Guests on Palm Jumeirah more often want the flowers waiting in the room, which moves the stage we cut for by a day.
Hotels in Downtown, Marina and on Palm Jumeirah run their own routine. Address Downtown, Atlantis The Palm, Four Seasons and Burj Al Arab all take the box downstairs, and it travels up without us.
Summer changes the packing more than it changes the order. Air near the coast reaches 40 °C and holds humidity with it, so we add insulated packing and keep the box out of direct sun from the workshop to the door. Peonies outside the season come here from the Netherlands, a long journey before ours even starts. Heads that have travelled that far go out slightly tighter than they would in the middle of the season. We also ask whether the box will wait in a car park before the handover, since that pause does more harm than the drive itself.
