Twenty-one peonies in Dubai: scent, and the mistakes that show at this count
Peony scent runs from strong and sweet to almost nothing, and it follows the variety rather than the colour. A photograph tells you nothing about it. It has to be raised while the order is being placed, because by the time the bouquet is tied the choice has been made for you.
Scented varieties are worth requesting for flowers that will sit in a bedroom or a small flat. They are worth avoiding for a dining table, where the food should come first and twenty-one open heads are a great deal of perfume to set beside it.
Head shape is the other variable a photograph hides. Some varieties open into a dense ball of tightly packed petals, others fall open into a loose bowl with a visible centre, and the same colour name covers both. At twenty-one heads that difference decides the whole silhouette. A dome of tight balls looks sculptural, a dome of open bowls looks like an armful carried in from a garden.

Scent also arrives late. A tight bud is nearly silent and the smell builds as the head opens, so a bouquet delivered closed will smell of almost nothing on the first evening. By the third day the same twenty-one heads fill a room. In an apartment with the windows shut and the air conditioning running, that build is stronger than most people expect. It catches senders out more than any other part of the order.

Mistakes that only show at this size
Insisting on an exact shade is the first one. Pink is generally available, white and coral come and go, and a rigid colour requirement on a large count often ends in a substitution nobody wanted on the morning of delivery. Peonies reach us from the Netherlands outside the season, so the batch that lands is the batch there is. A colour range gets you a better bouquet than a colour name does.
Asking for open flowers when the date is still days away is the second. They will be past their best by the time anybody hands them over, and peonies go from full bloom to falling petals quickly.
The third is ignoring stem length. Long stems suit a tall vessel and leave room for daily trimming, short ones suit a box or a low bowl. A bouquet arriving at the wrong length forces the recipient to improvise on the spot.

Summer air near the coast reaches 40 °C and carries humidity, which pushes the whole timetable forward. Heads open sooner, the scent arrives sooner, and the bouquet finishes sooner. We add insulated packing and keep the box out of direct sun, and in the hot months a count of twenty-one goes out tighter than the same order would in winter. Offices in DIFC are the one address where we usually steer away from scented varieties. A reception desk in a closed lobby holds the smell all day, and not everybody walking past it has chosen to be there.
