It is worth saying at the point of ordering whether the drift inside the shade should run towards apricot or towards pink, because a florist who does not know will pick whatever came in that morning. What reaches the bench is not entirely in our control, and that is the honest part of this conversation. Farms cut what they cut. A week when the apricot leaning cultivar comes in thin is a week when a pink leaning piece is the better order, and we would rather say so at the point of booking than deliver a compromise and let somebody work it out on the day. #### Where these orders go in the city Large single shade pieces are ordinary work here. Receptions in Downtown and Business Bay take them for counters and long tables, hotels order them for public areas, and a villa dinner on Palm Jumeirah usually wants one substantial arrangement instead of several small ones. All of those are looked at from a distance and for a long time, which is precisely the viewing condition that exposes a badly sorted bunch.
