Tea roses in Dubai: getting some of the scent back
A bouquet gets judged in the first half minute after the wrapping comes off, and for this particular rose that is the worst possible moment. Whatever fragrance the cultivar has is not available yet. Anyone who decides the flowers smell of nothing at the door has decided it too early.
Perfume rises with temperature. The compounds that carry it are volatile, so they lift off a warm petal and stay locked in a cold one, which is why a bunch that has just come out of a cool box says almost nothing. Give it an hour standing in the room and it becomes a different flower. That hour is free and almost nobody spends it.

The box is always colder than the room it lands in.
Every run out of the workshop goes with insulated packing, and in summer, when the desert climate takes the city up to 40 °C with high humidity along the coast, that packing is what gets the flowers to the door in one piece. It also means the bouquet arrives cool by design. We deliver from 9 AM to 10 PM, and a bunch handed over at nine in the evening has been kept cold for the whole of the previous hour. The instruction we give with these orders is short: unwrap, put them in water, and leave them somewhere the air conditioning is not blowing directly at them. The scent shows up while the recipient is doing something else.
Which stems actually smell
Garden-type and old-form cultivars carry more fragrance than the classic long-stemmed ones. They also tend to have looser heads with many short petals that open wide rather than holding a tight cone. That shape is a fair part of what people picture when they say tea rose in the first place.
The trade-off is vase life, and it is a real one. A head built to open wide has less time in it than a head built to stay closed, so the most fragrant roses in any bucket are usually the ones that finish first. Dutch roses at 60 to 90 cm sit at the durable end of that scale and Ecuadorian stems up to 120 cm sit further along it still. Nobody should be surprised when the scented bunch goes over before the unscented one standing beside it.
Ask which stems smell of anything today rather than asking for a scented variety by name. Fragrance varies between batches of the same cultivar, and the person who handled the buckets that morning is the only one who knows the answer.

Contents beside the roses follow the warm half of the spectrum. Greenhouse tulips and chrysanthemums from the UAE hold that tone and add a denser texture without pulling the yellow out of the roses. Dutch peonies outside their season sit closest of anything to this shade and finish earlier than their neighbours, so we put them where they can be lifted out. Delivery across Downtown, Marina, JBR, Business Bay, Palm Jumeirah and DIFC takes 2 to 4 hours. Family dates and business handovers account for most of what leaves in this colour.
