Two things separate a tall stem from a short one on the bench, and neither of them is the height itself. The head is larger and opens more slowly, since a bud carrying more petals takes longer to unwrap. The stem is straight and rigid enough to stand without support, and everything else in this category depends on that one property.

Rigidity is also the first thing to fail.

A stem left out of water too long goes soft just below the head. On a short rose nobody notices. At a metre the bend is visible from the other side of the room, which is why the same hour of delay costs a long grade far more than a short one. Delivery here runs 2 to 4 hours and long bunches leave first in the run, and on the hottest weeks we would rather move a midday slot than send a metre of stem into it. Petal count changes the arithmetic

Nine long heads read as more flower than fifteen ordinary ones. Numbers that would look thin at standard length are enough at a metre, so florists building tall bunches work with lower counts and leave more space between the blooms. A crowded tall bunch looks anxious rather than generous.

That is worth knowing before you compare two prices, because you are rarely comparing the same bouquet.

The slower opening is the other half of the bargain. A bud with more petals holds its closed shape for days, so a metre bunch photographs the same on Wednesday as it did on Monday, and in an apartment kept cool all day it holds that shape longer still. Warm rooms undo it quickly, which is the one thing worth passing on to whoever receives it.

Where a metre sits in the grades we buy

The market here runs on Dutch roses at 60 to 90 cm and Ecuadorian roses that reach 120 cm. A metre falls inside the second of those, near the upper part of it rather than at the edge, which is why this length is dependable when 150 cm is not. It is grown that way rather than built that way. The plant takes longer, produces fewer stems in a year, and the box arrives in batches.

Price does not rise smoothly along that scale. It steps.

Each grade above the standard is a separate line at the farm with its own volume, and the tall lines are small, so the jump to a metre is larger than the difference in centimetres suggests. Above a metre the steps get steeper again. None of that shows in the finished bunch, which is why a metre bouquet of a modest count often costs what a large bunch of ordinary roses does.

Check three things when the box opens

  • run a hand down two or three stems, which should be firm along the whole length with no soft section under the head
  • look at the cut ends for a dark waterlogged edge, since a tall rose that travelled badly reports it there before the petals do
  • check that the outer heads sit level with the inner ones rather than dropping below the line.

Ask the courier to wait while you do it. A bunch at this grade is worth two minutes at the door, and nothing about the check is unusual enough to embarrass anyone.

One metre is the point where a bouquet still behaves like a bouquet. It goes into a car, into a lift and into a lobby at Address Downtown or a DIFC reception without a plan being made first, and above this length that stops being true.
