120 cm roses in Dubai: the build is on show

At standard length a florist can hide a good deal inside the wrapping. At a hundred and twenty centimetres almost nothing stays hidden, because the stems are visible along their whole length and the heads sit at eye level or above. Whatever was done quickly at the bench gets read by everyone in the room.

A bunch this size is tied as a spiral. Every stem lies at the same angle across the last one, the binding point sits low, and that point carries a great deal of weight on a long stem. Get the angle wrong and the bunch either closes into a column or opens into a fan that will not stand upright. A bunch that leans when it is set down was tied too high, and no amount of paper corrects it afterwards.

All of this is visible before the wrapping goes on.

What we look at, and what you can look at

Start down the outside of the bunch. The stems should run in one direction with an even twist rather than crossing at random, and the outer ring should be as straight as the inner ones, since a florist working in a hurry hides the bent stems where the paper will cover them.

Thorns and lower leaves come off the exposed part of a long stem for a practical reason. A metre and a fifth gives thorns plenty of chances to catch on the wrapping and on the arm of whoever is carrying the bunch through a lobby.

Four things to check when the bouquet arrives:

  • the stems run one way with an even twist, with no crossing near the binding point
  • the binding point sits low on the bunch rather than up near the heads
  • thorns and leaves are stripped along the whole open part of the stem, not just where a hand goes
  • the cut ends finish level, which is the difference between a bunch that stands in a vessel and one that somebody has to hold upright.

Building for the room it is going to

Most bouquets at this length in Dubai are built for a handover somewhere public. A lobby at Burj Al Arab or Atlantis The Palm, a reception floor in Business Bay, a family date where the object has to be seen from the door as it comes in. In those rooms the tie matters more than the count, because the bunch is looked at from several metres away and from more than one side.

There is a second reason the build shows here. A bunch of this height is almost never set down immediately: it gets carried across a floor, held for photographs and then handed on, and every one of those movements pulls on the binding point. A bouquet that survives all of it without loosening was tied with that in mind.

A bouquet built for a table is a different object entirely.

That one gets a tighter dome and a lower binding point, since it will be seen from above rather than across a room. Say which of the two you need and the build changes at the bench, before anything is committed.

Why the tie is worth paying for
