Before a stem goes into the hand, the batch is sorted. Heads are graded by size, stems by thickness, and anything with a soft neck or a bruised outer petal is set aside instead of buried in the middle.

That sorting is most of the quality of the finished bunch. A florist who skips it hides the weak flowers where they cannot be seen. By the third day those are the heads that hang while the rest are still opening.

The outer ring and the centre

The ring facing outward is set with the largest, most even heads, because that is the edge the eye follows. The centre takes the tightest buds, since they open last and keep the dome from collapsing all at once in the middle of the week.

Stem thickness is sorted in the same pass, for a reason that only appears later. A bundle of mixed thicknesses will not hold a clean spiral. The binding point then ends up thicker than it needs to be, and the stems in the middle get squeezed.

Get that backwards and the bunch looks correct on the first evening and hollow by the third.

What the climate does to a graded batch

Dutch roses arrive at 60 to 90 cm, Ecuadorian stems reach 120 cm, and Dutch peonies come in outside their season, so a batch on the bench is rarely uniform to begin with. That is the argument for grading, not against it.

Summer is where grading shows. At 40 °C outside and with coastal humidity we pack insulated and keep the bouquet out of the sun. That protects a sound bunch. It cannot rescue a head that was already soft when it was tied. On fifty-one stems that head sits in the outer ring, which is where everyone is looking.

Delivery across the city takes 2 to 4 hours, and the bouquet spends all of it in a vehicle. A graded bundle comes through that better, because the heads rest evenly against each other and nothing presses on a smaller neighbour.

Weight is the other thing a batch decides. Fifty-one thick stems with wet ends and a paper collar are heavier than most people expect. Recipients change hands within a minute of taking them, and a courier usually carries the bunch against the body.

Where the difference is noticed

A handover in a DIFC or Business Bay office is seen by a room. The outer ring is what that room reads, and a gap filled with foliage is visible from a doorway.

An apartment in Marina, JBR or Downtown is closer work. There the centre matters more. The bouquet is looked at from above every day for a week, and a hollow middle becomes obvious long before the flowers are spent.

Hotels sit between the two. Address Downtown, Four Seasons and Atlantis The Palm all mean the bouquet is carried some distance before anybody examines it, so the build has to hold its dome from every side.

Family dates on Palm Jumeirah are where the batch matters least. The bouquet is usually opened and put into water within minutes. Small unevenness disappears once the heads have drunk and relaxed into the dome.
