Cutting the stems shorter drops the dome into the wider part of a tapering jug, which is the commonest shape in a rented apartment here, and it costs height nobody was looking at. The second is simply to leave the binding on. A bundle that stays tied holds its own outline in a vessel too wide for it, provided the tie sits under water and is not biting into the stems.
