The stem is straight and firm enough to hold an angle in foam, the head is not so heavy that it lolls forward, and it opens slowly, so the shape built on Monday is still recognisable on Friday. Watch the water rather than the flowers. Foam holds a limited amount of it, the surface dries from the top down, and a stem sitting in dry foam stops drinking long before the petals show anything.
