A tie pulled hard crushes the hollow part of the stem and water stops moving through it. The central head of the cluster then goes soft while the side buds around it are still closed. That is the fault most people describe afterwards as a bad batch. It is almost always the binding point, and it shows in the stem long before it shows in the flower. Good work on this variety is mostly subtraction. Each stem carries shoots that will never set, along with buds that have already gone over, and those come off in the workroom instead of in the recipient's kitchen. Nobody counts them at the handover. The difference is obvious by the third day, when nothing brown has appeared between the heads. Check whether the blind side shoots have been taken out of each cluster, whether the cut ends are clean and slanted rather than crushed flat, and whether the binding point sits low enough for the clusters to open above it. All three take about ten seconds and all three predict how the bunch looks on day four. Foliage matters less here than it does elsewhere. Packed cream heads sitting close together already give the eye plenty to read, and heavy greenery pushed between them turns the surface into a hedge. #### Why the bench matters more on this island At 25 to 33 °C in high humidity a crushed stem gives itself away faster than it would in a cool room.
