### Edible bouquets in Phuket: the first minute, and the address behind it From three paces the outline is a bouquet. Up close it stops pretending: no stems, no water, no scent, and the person holding it works all of that out while the door is still open. What they do in the next minute is the part worth designing for. Most people turn the thing round before saying anything. They look for the join, for how the pieces are held, for whether something will drop off between the door and the kitchen table. A cut bouquet never gets inspected that way, because everybody already knows what is inside one. #### How it is held together Each item sits on a wooden skewer. The skewers are gathered into a spiral the way stems would be, or pushed into a block of foam inside a stiff card cone, and the outer layer of paper or mesh does the work that foliage does in a floral build. Differences in height are deliberate, so the front row does not hide the back. The skewer passes through the packaging of an item and never through the item itself, and nothing edible is glued to anything. A rushed build gives itself away at the base and along the edges. Skewer points come through the wrapping, the bundle will not stand unless it leans on something, and items are packed so tightly that one creases the wrapper of the next. Ask for it to be carried upright. Flat in a boot, it arrives as a different object. #### The address decides the build Delivery runs 90 to 180 minutes along the west coast, with separate windows for villas, marinas and airport routes, and during monsoon showers between May and October or on the hill roads in the evening we add time to the route. Every one of those minutes is spent by a gift that has no water in it, which is why we ask for more detail here than we would for roses. Four things we want before the build starts: - The hour of the handover. - Whether the recipient will still be in the room an hour later, or heading straight out. - Allergies and restrictions. Nuts, sugar, dairy in a filling, a child's age, someone halfway through a course of treatment: settled before the order, because with roses a wrong guess means a colour nobody likes, and here it means a present that cannot be eaten. - A phone number for whoever opens the gate, if that is not the recipient. An office makes the allergy question sharper, since a shared arrangement gets opened in front of everybody and turning down a piece of it in public is awkward. #### Where it goes on this island Resort birthdays take it well. A room with four people in it and one small table is exactly the case where a vase is a problem and a box is not. Hotels along Kata, Karon and Kamala are straightforward runs. Villas out past Rawai and Chalong need the extra hour built into the promise rather than discovered on the way, and an airport arrival is the one scenario we usually talk people out of, since the recipient then carries the thing through a car park and a car.
