What remains is a short list of stems that do the job without complaint. #### What sits beside cold fruit Firm-skinned berries sit happily next to dense heads. Roses are the reliable answer, since the petal surface holds, the head keeps its shape at the low temperature the whole box travels at, and nothing sheds onto the tray below. Chrysanthemum belongs in the same group and holds form longer than most cut material, which makes it the practical choice when the route is long. Thai orchids work for a different reason, because the flower is tough, the stem is rigid, and cool air is where it is comfortable anyway. Hydrangea earns a place when the head goes into its own vial, since it fills the flower side without leaning across the boundary into the food. The barrier between the halves does real work in all of these builds. The first keeps growing inside the packaging, leans out of position within the hour and cannot be corrected once the box is shut. The second carries open pollen, which travels onto everything under it and shows immediately on pale fruit. The third weeps a slippery sap from a fresh cut, and in a tight container next to food there is nowhere for that to go. None of the three are bad flowers, and all three belong in a bouquet on its own. Chocolate is the fourth variable. #### Chocolate decides the route Coated fruit answers to warmth and ignores the schedule entirely. Once a coating has softened it never sets back into the same surface, so the whole box travels cold and gets handed over rather than left. That is the single constraint that shapes the timing of these orders, and we deliver 9 AM to 10 PM with the later slots easier on a cold build. Ordinary days on the island run 25 to 33 °C, which is manageable, and the trouble comes from standing still in it. Whole fruit travels better than cut, which is the other half of the same problem.
