Spray roses in Phuket: the stage they arrive at

The group splits by how tightly the head is packed. Dense many-petalled sorts arrive closed and open slowly over several days, while looser cups show their centre on the first evening and give everything at once. In air that sits at 25 to 33 °C, that difference stops being a preference and becomes a scheduling question.

Ask what stage the stems are at on the day of the order rather than which variety looks best in the photograph. A closed bunch bought for the same evening looks sparse when it is handed over. A fully open one bought four days early is dropping petals by the time it is needed. Warmth compresses both of those timetables.

Rain, hill roads and the extra half hour

The rainy season runs May to October, and its main effect on us is road time. Evening traffic on the hill roads does something similar in any month. We add time to the route so the slot holds, and for this group the extra half hour is easier to absorb than it would be for one large head. A cluster carries less weight on each stem, so a knock in the box does less harm and the petal edges do not fold back. The bunch arrives close to the way it was built.

Humidity works in its favour too. Petal edges dry out in still cooled air far faster than in the wet air outside, which is why a villa open on one side is a kinder address than a sealed suite.

We work 9 AM to 10 PM. Resort birthdays and dinners by the sea fall late in that window, airport arrivals fall wherever the flight does, and each of those wants a different stage of bud. That is why we ask for the hour and not only the day.

Rawai, Chalong and Mai Khao sit further out than Patong or Kamala, so a bunch heading there leaves the bench tighter. For Phuket Town and the west coast beaches we can cut it finer. Villas and marinas have their own windows, and the airport has another. None of this changes the flowers, only the day we start on them.

Mixing is where the local material comes in. Thai orchids and hydrangeas are always on the bench here, and both sit awkwardly beside a cluster stem because they occupy the same middle ground in a bouquet. Chrysanthemums do that job better when a bunch needs bulk without another rose in it.

Vases are the part we cannot control. Stems in this group are thin and flexible, a wide opening lets them splay until the clusters lean on one another and snap the small side shoots, so a narrow neck does the sorting for you.
