### Sweet and chocolate bouquets in Phuket: what a careful build actually looks like Every sweet keeps its own factory wrapper and is fixed to a wooden skewer through that wrapper, never through the sweet itself. Nothing is pierced, nothing is unwrapped in the workshop, and the recipient opens each piece exactly as it left the factory. That sounds obvious until you see an arrangement where it was not done. Photographs hide all of this. Skewers are gathered in a spiral and trimmed to one length, which is what lets the bundle stand on a table without being propped against anything. A collar of paper, mesh or felt closes the outside. The gaps between rows are filled with material nobody is meant to eat, and the amount of it is the single biggest difference between two arrangements of the same diameter. > "Lift it before you judge it. If half the front row comes away with it, or the piece is glued into the collar, the arrangement was made to be looked at rather than eaten. That matters here more than it sounds, because these are opened in front of people and passed around within a minute of arriving. Turn the finished arrangement over before you accept it. The skewer ends should be level and covered, the base solid enough that the bundle stands on its own, and nothing should be catching on a sleeve when somebody lifts it off the table. A collar that hides an untrimmed base is the commonest shortcut in this format, and it shows up the moment the bouquet has to be carried across a room. Filler is cheap and volume is impressive, so a large silhouette can hold surprisingly little. The heft in your hand tells you more than the width does, and asking what sits under the collar is a fair question to put to any florist before ordering. #### What the island adds to the build Air here runs between 25 and 33 °C all year, so the choice of what goes into the body of the arrangement is made under a permanent constraint rather than a seasonal one. Firm centres, caramels and sugar shells hold their shape through a delivery and through the hour on the table afterwards. Chocolate goes in where it will be eaten first, and the box stays closed until the handover. Softening is not really about melting. Warmth creases the wrapper and blurs the moulded edge, and once the piece cools again the fat comes to the surface as a pale bloom. The sweet is fine. It does not look fine, and at a table full of guests that is the same thing. The west coast is a 90 to 180 minute run, with villas, marinas and airport routes on separate windows, and from May to October the monsoon adds time to all of them. We build close to the hour of the handover instead of in the morning, and we take orders from 9 AM to 10 PM. A tall arrangement photographs better and travels worse, and for a resort birthday where the bouquet crosses a restaurant before it reaches the table, a lower and denser build loses nothing and survives the walk.
