### Hyacinth bouquets: the stem is the part to understand Cut a hyacinth and sap appears on the surface immediately. It is watery, slightly slimy, and it seals the cut ends of whatever is standing next to it. That is why a florist rests hyacinth stems on their own before combining them with anything else. A bunch assembled without that pause fails at the edges, and the casualties are the neighbours. Handling the bulbs themselves can irritate skin, so gloves come out at that stage of the work. The stem also keeps growing after it is cut. An arrangement levelled off neatly on day one turns into a staircase by the end of the week, as the spike lengthens and the bells open from the bottom upwards. In a tight hand-tie that looks careless. In a loose standing bunch it is one of the more interesting things this flower does, and it is why we usually build hyacinths with space around each spike. > "We tell people the bunch will not look the same on Friday as it did on Monday. Anything sharing water with hyacinth gets the same sealed cut ends, so a mixed bunch built in a hurry loses its edges first while the hyacinths carry on looking well. That is why the hyacinth goes in last when a bunch has to combine at all. Water should be shallow and changed often, because the fleshy stem softens fast wherever it stands. Trim a little off the base each time. Leave the white heel at the bottom of the stem intact if it is there, since that pale section takes up water far better than the green above it. Stems sold with the bulb still attached keep drinking from the base plate and outlast cut ones. They are awkward in a hand-tied bunch, which is why they usually turn up planted or set in a shallow bowl. #### What the island adds to that Phuket runs at 25 to 33 °C in humid air, and warmth works against a dense spike. The bells open faster, the display shortens by days, and the scent arrives all at once instead of building. A shallow bowl of water in a warm room also clouds quickly, so daily changes matter more here than they would in a cold house.
