### Ranunculus bouquets in Phuket: the bunch that changes size in the room Most cut flowers arrive at their best and go downhill from there. Ranunculus does the opposite for the first few days. The bud that comes through the door is a tight ball about the size of an apricot, layered like a paper rosette and closed hard at the top. By the third morning it is twice as wide, open enough to show the dark centre, and the whole bunch has a different outline to the one that was delivered. Practical consequence first. A bouquet that sits neatly on a narrow console on Monday will be hanging over both ends of it by Thursday, so the vase wants a spot with nothing pressing in from the sides. Colour moves as well. The layered bud keeps its darkest tone in the tightly packed middle, and as the outer petals fold back the shade you see lightens noticeably. A coral bunch reads apricot by the end of the week. Anyone matching flowers to a table setting is choosing the open colour whether they realise it or not. Opening changes what the bunch is doing in the room, too. Tight buds read neat and slightly formal, which is why they photograph so well on a laid table. Fully open ranunculus reads loose and garden like, closer to a peony than to a rose, and the stems bend further out as the heads gain weight, so the whole outline spreads along with the individual flowers. A bunch bought for a specific evening therefore wants timing rather than simply ordering. Two or three days ahead in a cool room gets it to the width most people have in mind when they ask for ranunculus. #### Timing it on this island Warm air runs the clock, and the air here usually sits between 25 and 33 °C. Two or three days in a cooled bedroom is the plan. Two or three days on a terrace is a different flower entirely, and by the third evening it will be dropping petals instead of opening.
