A sunflower head is heavier than it photographs. By the time it is cut the disc is already packed with seed, and in a basket that mass sits on a short stem with only a few centimetres of cut buried in wet foam. Nothing about the flower is delicate. Everything about the way it has to be seated is.

Set high, on a long neck above the rim, a head turns into a lever. The bowl gets picked up, the head swings, the channel around the stem widens, and the flower stops drinking days before it stops looking well. On a long drive that happens without anyone touching the arrangement.

Good work sits the discs almost on the rim. Stems go in at an angle rather than straight down, which buys a longer channel and more contact with wet foam for the same depth, and an angled stem is far harder to work loose.

There has to be air between the discs as well. Heads touching at the edges rub each other's petals every time the bowl is moved, and those marks are visible on arrival rather than a week later.

Because one disc covers so much surface, the count stays low. A handful of flowers fills a bowl that would take three times as many roses, and the spaces between them go to tropical foliage rather than to more heads. Anyone counting stems from a listing will read the size wrong.

The discs also get staggered by a couple of centimetres in height. Level heads look tidy on the bench and turn into one flat yellow plate from any angle above the table, whereas a small difference in height gives the arrangement a front and lets light get between the flowers. That is a decision made in the first minute of the build, and it cannot be adjusted afterwards, because a stem lifted out of the foam will not go back into the same channel.

Foliage does the last part of the work. It goes in around the rim to cover the block, and it fills the gaps that a low count leaves between the heads. Without it the top of the foam shows, and green foam in a gift looks exactly as it sounds.

Why that matters more on this island

A basket built loosely survives a table. It does not survive the drive to one.

Along the west coast a delivery takes 90 to 180 minutes, and villas, marinas and airport routes run on separate windows because the last stretch is often longer than the main road. From May to October there is rain, and evening traffic on the hill roads adds to the slot again. Every one of those minutes is movement, and movement is the thing an over-tall seating cannot take.

The heat works in the format's favour, oddly enough. At 25 to 33 °C a wrapped bouquet is drying at the cut ends the whole way, while a basket travels with its water already in place. Humid air slows evaporation from those broad leaves too. What we add for the monsoon is time on the route rather than anything on the flower.
