Twenty-one roses in Phuket: order them long and cut them down
Ask for the stems long. Length can be removed at any point and never added back, and that one fact settles most arguments about this count. Everything else on the order is negotiable.
Every daily trim takes a little off. A bouquet that arrives at the exact height of your vase will be standing on its cuts by the weekend, with the heads sunk below the rim. Order twenty-one roses a size longer than you think you need and the arrangement still looks intentional on day six. There is a middle length most people end up choosing without knowing it, around fifty to sixty centimetres, and it survives a week of trimming without becoming stumpy.
The rule works because a vase is a fixed object and a stem is not. A hall console, a bedside table and a low dining table all want different heights, and none of them can be guessed reliably from another country. Trimming settles it in the room where the flowers will actually stand.

What the island does to that rule
The climate here is humid tropical, usually 25 to 33 °C, with rain from May to October. A long stem has a longer water column to lift, and in warm air that shows sooner. A head that stops drinking bends at the neck a couple of centimetres below the bud. Recut it, lay the whole flower flat in cool water for a couple of hours, and some of them straighten out. The trimming habit and the recovery trick are the same operation, which is what makes the long version worth its extra care.
Length also decides where the bouquet can stand once it arrives. A tall build belongs in a wide entrance hall or a floor vase, and a villa with height above the table takes it easily. A low room, a bedside table or any surface a sleeve passes twice a day argues for the shorter cut.
Route time gets added in the rains.
During monsoon showers and evening hill traffic we build a margin into the route, and the west coast run takes 90 to 180 minutes with separate windows for villas, marinas and airport routes. A longer time in transit means a longer first drink at the other end. Put the bouquet into deep water for an hour before anything else happens to it.
