Up to twenty or so stems a florist can hold the whole thing in one hand and correct it as they go. Past that point the bundle stops fitting the palm, the weight starts working against the wrist, and the build becomes a sequence that has to be done in the right order or started again. Fifty-one roses sit just above that line.
The spiral, and why it is not decoration
Every stem goes in at the same angle, each crossing the last in the same direction, so the bundle turns into a cone that stands on its own cut ends. Done properly, the binding point stays no thicker than it has to be, water reaches every stem, and the heads spread into an even dome. Done carelessly, with stems pushed in parallel, the bundle becomes a column that will not stand, presses the inner stems shut and leaves a hollow in the middle. You can see which of the two you have by standing the bunch on a table without holding it. A properly spiralled bundle balances there for a moment on its own.
Nobody builds this in five minutes.
Why that matters between here and the door
