Unwrap the bunch straight away, even when the paper still looks perfect. Damp kraft pressed against wet stem ends begins to sour, and the ribbon at the binding point squeezes the stems in exactly the place they need to stay open. Whatever the wrapping was doing on the road, it stops being useful the moment the box is indoors.

That first hour decides more than the flower did.

Trim two or three centimetres off each stem at an angle, and put each one into water as it is cut rather than laying it on the table until the rest are done. During monsoon showers and in evening hill traffic we add route time, which is honest planning rather than a delay, but it does mean the stems have been out of water longer than the clock on the order suggests.

We run from 9 AM to 10 PM, and for anything beyond the coast road we would rather put the drop in the morning slot than send it into the hill traffic at the end of the day.
