In a bunch of twenty five the grade hardly matters. Volume does the work and one ordinary head among many goes unnoticed. Take everything away except one stem and the choice of flower becomes the entire decision.

A large headed grade earns its place here. It reads from across a room, it holds a recognisable shape while it opens, and it goes on looking deliberate rather than accidental for the whole of its life in water.

Standard commercial roses are bred to travel and to sit tightly packed in bunches, which is exactly why some of them never open properly on their own. A bud that stays shut for a week looks unfinished on a desk. The same flower buried in a bunch of fifty would simply be part of the mass, and nobody would give it a second look.

The opposite risk is just as real. Grades bred to open wide and fast look magnificent on day two and blown by day four, and on a single stem there is nothing else to look at while that happens.

What the island does to that choice

Roses arrive here imported, so what is on the bench on any given day is what a delivery brought, and the grade is agreed at the order rather than assumed. For a single stem that conversation is short and it is the only one that matters.

Deliveries take 90 to 180 minutes along the west coast, with separate windows for villas, marinas and airport routes, and we work from 9 AM to 10 PM. A lone stem rides worse than a bunch does, since it has nothing beside it to stop it rolling, so it goes fixed inside a box rather than loose in paper.

Heat is the other factor and it works on the opening rather than on the travel. Air at 25 to 33 °C brings a bud on faster than a cool room would, so a flower that arrives half open in this climate is closer to finished than the same flower would be somewhere temperate. We build a single stem tighter than we would build one for a bunch, precisely because the room will do the rest of the work.

  • Where the stem is going: a desk, a bedside table, a laid dinner table, or inside another gift.
  • How long it needs to look right, since a fast opening grade and a slow one are different flowers by day four.
  • Whether it travels to a room in Patong or out to a villa, because the drive changes what we cut.
  • Whether anything is standing beside it, which decides the colour more than taste does.

A stem bought on Monday for a Friday is a different order from one bought for that evening, and the honest answer is a tighter bud with a firmer neck. Monsoon months from May to October add route time in the evenings, so an early slot leaves more of the flower for the days it is meant to cover.

Nothing about that is dramatic. It is simply a choice made once, at the bench, that cannot be revisited later.

The recipient has one job in return, and it is smaller than the one a bunch hands over. Change the water every second day in a narrow vessel rather than topping it up, and give the stem a fresh angled cut each time. A single stem in a small volume of water clouds it faster than a bunch clouds a full vase, so the interval is shorter here than the usual advice suggests.
