Bright bouquets in Bali: the season that decides the palette is not the local one

Deep colour comes and goes with a growing year, and the growing year that matters here belongs to somewhere else. Most of the strong material we work with is imported, so the shades on offer in any given week follow harvests far from this island rather than the dry and wet months outside the window.

That has one practical consequence. We confirm what is actually in the cooler before promising a specific shade, and a request made three weeks ahead gets answered honestly rather than optimistically.

Ranunculus is the clearest case. It holds intensity well and brings a dark centre that gives an arrangement weight, and it arrives seasonally rather than continuously. Seasonal peonies behave the same way, which is why we treat both as the part of a build that has to be checked before it is offered.

Imported roses are the constant underneath all of that. Deep shades at 60 to 90 cm cover most bright work, and Ecuadorian stems up to 120 cm go into pieces that have to read across a large room.

How long it stays looking like that

Strong colour and long life are not the same property, and a bright bouquet is usually a mix of both kinds. Some of it is there for the first evening and some of it is there for the week, and knowing which is which changes what people do with the arrangement three days in.

Macrophylla hydrangea is the one to watch. It fills volume with a single stem, which makes it useful, and it is also the honest route to blue, because no rose produces blue pigment and anything sold in that shade was dyed after cutting. Dye fades in patches rather than evenly.

Lisianthus sits in the middle of the range and does the quiet work of keeping the arrangement coherent once the showier heads have opened out.

Two habits do most of the maintenance. Change the water instead of topping it up, and recut the stems at an angle when you do it. Any head that has finished comes out, because in a saturated build a spent bloom pulls the eye harder than it would in a pale one.

What the drive adds

Seminyak, Canggu and Sanur sit inside a 90 to 150 minute window, and Uluwatu, Tabanan and remote villas take up to 3 to 4 hours. Above 30 °C in high humidity we use firm wrapping and a cooling element. The heads keep opening through all of it, so the gaps we leave between them at the bench are wider than the gaps you see at the door.

Between November and March the box stays closed until the courier is under cover. Rain does less damage to these flowers than the drive does.

We work 9 AM to 10 PM on GMT+8, and for an evening handover we would rather build in the afternoon than have the box finished by lunchtime.
