French reflexed roses in Bali: what the technique costs

Two bunches of the same rose can look like different flowers. In one the buds are closed and pointed, in the other the heads are wide open and half again as broad, and the only thing separating them is an hour of somebody's hands. Reflexing is a florist technique, not a variety: the petals of an ordinary rose are folded back one at a time until the closed cup opens out.

Every reflexed petal has been moved out of the position it grew into. The tissue at the base is stretched, and the outer rows that used to shield the centre now face outwards with nothing in front of them. So the flowers look their best on the day they are made and decline faster than the same roses left alone. Dry air takes the petal edges within hours, fingers mark them, and a closed bud shrugs off a car journey that would crush an open head.

That is the trade, stated plainly.

It is no fault in the work. Any florist who tells you an open head lasts as long as a closed one is selling something.

What the trade looks like from here

Seminyak, Canggu and Sanur take 90 to 150 minutes, while Uluwatu, Tabanan and the outlying villas take up to 3 to 4 hours. We work 9 AM to 10 PM, orders start at 650 000 IDR, and payment goes through QRIS, GoPay, OVO, DANA or cash to the courier. The long routes are where this format costs the most, because an open head is at risk for every one of those minutes. We reflex as late as we can and drive slower than usual.

Four things we need before the folding starts:

  • The hour of the handover, since the work is done on the same day and cannot be brought forward.
  • The address, because a run to Uluwatu changes when we begin.
  • The stem count, which is the single biggest factor in how long the bench work takes.
  • An agreement that the bunch is built for that evening.

Humidity is the one thing on the island that helps. Air at 30 °C and above, carrying plenty of moisture, dries an exposed petal edge more slowly than a cooled room does. A reflexed bunch on an open terrace outlasts the same bunch in a sealed suite.

Rain is the opposite. From November to March we add route time, and a finished open head waits badly while a van sits in traffic.

Not every rose can be treated this way, which surprises people who have chosen a colour first. The technique needs a many-petalled variety with substantial tissue, since a thin petal tears at the base and that flower is wasted mid-job. It also needs a bud at exactly the right stage, neither rigid nor already loose, and that window is a day or two wide. Imported roses at 60 to 90 cm are our usual working stock for it. Ecuadorian stems up to 120 cm reflex into a larger cup and carry more weight on a long stem, which the road then has an opinion about.

Villas and Jimbaran wedding venues take most of what we make in this format. Both are evening events with a fixed hour, which is exactly the shape the technique was built for. Ubud dinners come third, and they are the easiest of the three to time.
