Single-stem garden roses in Bali: the quieter end of the rose scale

The cupped many-petalled head sits some distance from the formal end of the rose scale. A dozen long-stemmed red roses makes a declaration, and everyone in the room understands it, including people it was not meant for. An open, softly built bunch of garden roses says something quieter. That is why it travels well to a mother, to a friend of twenty years, or to a partner on a weekday with nothing attached to the date.

Where the variety carries scent, it arrives on the second day. The gift keeps changing after the person has stopped watching it. Bridal and event work takes the same flower for a related reason, since a full head photographs without needing a hard outline.

There are jobs it does badly, and they are worth naming before an order goes in. A presentation piece seen from the far side of a hall needs mass and colour, and the layered centre you paid for stops registering past a few metres. Spray branches give more points of colour for the same physical volume, so in that situation they are the better buy. The same holds for anything meant to be photographed from a stage. Distance is the whole argument.

Order nine of them and the recipient sees nine, not thirty assorted heads. The count on the invoice and the count in the room are the same number, which is the practical reason this build exists.

What the island does with them

Most of our addresses here are seated ones. Dinners in Ubud, ocean villas with a long table and small ceremonies at Jimbaran all put people within arm's length of the flowers for hours. Nusa Dua hotel rooms are the exception, since a bunch there is read from the door and then largely left alone. We build differently for the two.

Ranunculus, lisianthus and macrophylla hydrangea sit on the bench alongside these roses, and all three are tempting to add. Beside a large cupped head they mostly compete for the same attention. One strong centre per bunch is enough, and everything else should be doing supporting work.

We work 9 AM to 10 PM. Seminyak, Canggu and Sanur take 90 to 150 minutes, while Uluwatu, Tabanan and the remote villas take up to 3 to 4 hours.

Heat is the variable that changes the flower, and the route is a separate problem. Above 30 °C and in high humidity we use firm wrapping and a cooling element, and a heavy multi-layered head needs that more than a light one does. Such a head also opens faster in a warm villa than it would in a cooled room, so a bunch built for Friday is cut differently from one built for tonight. During the rainy months from November to March we start earlier on the long routes. The flower itself does not mind the rain at all.

One thing is worth passing on to whoever takes the box. The neck just below the head should feel firm rather than yielding, because a heavy head on a soft neck bends before it ever opens. After that it is ordinary rose care, an angled cut and deep water changed daily.
